Crab & Corn Stuffed Chiles – Mmmm, good! August, 18, 2014

Darrel went fishing and crabbing this morning with Max. Took a nap this afternoon on the couch. (Another reason to call/text me, because his phone is so annoying and loud that he can’t possibly sleep through it!)

Max caught about a 12 lb King today. Darrel caught shakers. Not sure what is going on, but he is definitely not having luck fishing this year.

We ended up with about 30 crab for the weekend so I had him bring them home (after giving some away) and we cooked them up. We still had about 4 from Saturday, so there was a lot to clean.

I turned on the Outlander series on Starz, and Darrel and I started picking while Courtney was on his computer and phone. Pretty soon they both were watching the series.

Darrel and I ended up picking probably 15 crabs and watched the first 2 episodes.

I had already decided to fix crab and corn stuffed Ancho chiles for dinner. We had quite a few chiles in the garden that were quite big. I have been pleasantly surprised at how well they are doing this year. I picked 6 of them, along with 2 jalapenos.

Slit chiles horizontally just below stem and then vertically down the length. Remove seeds and veins. Most Chile Relleno recipes call for roasting and removing skin. For this dish, I don’t and just enjoy the skins and flavor.

Spray a 9 x 13″ pan with PAM. Arrange chiles in pan. Fill chiles with crab and corn mixture. Drizzle with El Pato tomato sauce. Cover with foil and place in a 350 degree oven for 30 minutes.

While the chiles are cooking, chop cabbage, cilantro, onions, and jalapeno. Mix together in a bowl and squeeze lemon over, and stir together.

After 30 minutes remove foil and sprinkle Mexican cheese over chiles. Cook another 15 minutes.

Allow to cool for a few minutes, then take one chile and put in a bowl with several tablespoons of cooking liquid. Top with cabbage mixture and a dollop of sour cream.

It was amazing! Enough left for another meal!

Crab and Corn Stuffed Ancho Chiles

3 cups fresh corn kernels
1/2 cup chopped onion
1 jalapeño chopped
2 garlic cloves finely chopped
1 cup Rotel’s Tomatoes and Green chiles
8 Laughing Cow cheeses
1 lb fresh Dungeness crab meat
6 Ancho Chiles
1 can El Pato Mexican Tomato Sauce
1 cup shredded Mexican style cheese
2 cups chopped cabbage
1/2 cup chopped onion
1 jalapeño chopped
1/2 cup cilantro chopped
1/2 lemon squeezed

Sauté onions, jalapeno, and garlic for 5 minutes. Add corn and cook for 3 minutes. Remove from heat and add Laughing Cow cheese and Rotel’s tomatoes, stir to combine. Add crab, again stirring to combine.

Weekend Update, August 17, 2014

I have heard from a few people since I haven’t posted since last weekend. I am not sure if I am posting too many or too little, especially when not a lot is going on. I guess you will let me know.

Darrel ended up getting up early and fishing last Saturday, Sunday, and Monday and only ended up with a small silver on Monday for his efforts. He did end up being quite exhausted after all that and ended up taking a nap – in bed! – on Monday afternoon.

(Which reminds me, as he is taking another nap, please check with me before coming over by calling my phone or texting.  We had a neighbor come by while Darrel was sleeping and I was in the back yard.  He was quite noisy and woke Darrel up.  While he is feeling a bit better, this chemo has kicked his butt more than usual so I am feeling protective.)

His sister, Barbara, came over on Tuesday and we went to lunch at the Tin Room in Burien. We also did a little quilt shopping for her. Then we came home so she could visit with Darrel.

Wednesday, I had Barb, brother Ed, and Wilma over for dinner. Fried some fish and had a squash salad along with coleslaw. Squash and cabbage both came from the garden.

Thursday night we went to dinner for my dad and my belated birthdays, with my parents and Courtney. Tried a new Thai restaurant in Federal Way, Kwan Tip Thai. It was rated on Tripadvisor as the #3 restaurant in FW. Not that impressed.

Friday night we had the Wamsleys over for dinner and to watch the Seahawks play San Diego. I fixed lamb that had marinated in wine, garlic, rosemary, and lemon for 3 days, along with grilled squash and roasted green beans. I also fixed a yogurt mint sauce. It all turned out pretty well and the Seahawks won!

Darrel went fishing Friday morning with his buddy, Max. Then launched our boat on Saturday morning and fished, again with Max. He also dropped the crab pots.

We went out for a dinner cruise on Saturday night. A lot of the times, I will grill something on the back of the boat while we are fishing. This time I poached salmon at home and made a Salmon Salade Nicoise. It is one of my favorites.

While we didn’t catch any fish, we did get a ton of crab. Darrel went back out this morning with a neighbor, Jeff. They ended up getting 2 salmon! But, only 4 crab! You just never know.

Salmon Salade Nicoise

Salmon Poaching Liquid

Fennel fronds
Celery leaves and stalks
Peppercorns
Carrots
Onion
Shallots
White wine
Water

Simmer for an hour to blend flavors. I add the small potatoes for the salad and cook in the liquid, then remove. Reduce heat until it is 95 degrees. Lower salmon filets into liquid and poach for about 10 minutes, depending on thickness.

Blanch green beans for 3 – 5 minutes, drain, and dry well. Assemble salad with lettuce, green beans, onion, red pepper, tomatoes, potatoes, hard boiled eggs, Nicoise olives (I actually used Kalamata), and top with salmon. Dress with lemon vinaigrette. (Next time I make the vinaigrette I will measure the ingredients and post.)

A Beautiful Day – August 9, 2014

Darrel got up at 4:45 and went fishing with his brother, Wally. They dropped the crab pots and fished for about 6 hours. They caught a salmon that Darrel described as a small jack pink. I guess he wasn’t sure exactly what it was. But other than that, nothing.

They pulled the crab pots and only got 2 crab. Wally had a bit of a problem with one pot. Either the line was tangled up or it wasn’t as long of a line as Darrel said ( a bit of a difference of opinion, I gathered), but the result was that the pot was lost.

However, Wally redeemed himself when one of the lines that was spliced came apart and he was able to grab the line before the pot was lost!

Overall, I think the boys enjoyed themselves, even if they didn’t catch much.

Darrel said he felt better than yesterday. He seemed tired and a little weak when he got home. He took about a 10 minute nap on the couch with his legs up.

We went out about 5:30 for a dinner/fishing/crabbing cruise. I had picked up a B&E teriyaki tri-tip and marinated some of our zucchini and yellow squash with olive oil, fresh chopped rosemary and thyme, garlic, salt and pepper to grill with the meat.

It was fairly windy and it took us an hour plus to pull the pots, so we decided to head home instead of trying to fish and cook dinner at the same time in choppy seas. We did get 6 crab, however.

I fixed our dinner at home on the charcoal grill. I thought the zucchini and yellow squash turned out great. It was very flavorful. Darrel thought it was a little too flavorful.  I grated some fresh parmesan on the grilled veggies, what’s not to like?   Can’t please everyone, I guess?

Darrel is going out fishing again tomorrow, bright and early! I figure he must be feeling better!

Darrel Update – 8/8/14

As soon as we got in the car and left the clinic yesterday, Darrel was feeling nauseous. When we got home he smoked a little ‘medical marijauna.’ He seemed okay for a while, then came in and asked which drug he was to take for nausea. He took an andonsetron.

We went to the Wamsley’s for the first pre-season Seahawk game and he seemed to be doing better. Had fun with them and Brian and Colleen. The game was delayed due to lightening so we ended up leaving before the 4th quarter. Darrel fell asleep on the couch shortly after we got home and slept in until almost 7!

This morning he went for a walk and was gone for about an hour and a half. I could tell as soon as he came in that he wasn’t doing so well. I asked him if he had over done it, and he said, yes.

I left a few minutes later for my belated birthday pedicure. When I came back an hour and a half later, he was in bed. I had planned on vacuuming but decided to crack the rest of the crab he had cooked on Wednesday. He slept for about 2 hours after I came home.

When he did get up, He told me he had a temperature of 101. He took it again and it was 100.4. He ate a peanut butter and honey sandwich with a glass of milk. Then he went outside and did some watering and things in the yard, then played a computer game for a while. He finally took some oxycodone and then decided to go out to check his bee hives.

He seemed quite exhausted when he came in but his sister, Julie, was having everyone over for dinner to see Chelsea and he was determined to go. So, we headed over around 5:30. He did pretty good and lasted much longer than we both thought.

I guess we have been lucky he has done so well for so long. Hopefully, it was an aberration and he will be back to his chipper self soon.

Back in the Real World – August 7, 2014

Darrel put out the crab pots on Friday evening after we unloaded the boat and got some things done around the house. Saturday morning we went out to check them and had our limits, plus.

We went out again in the afternoon with Marilee and Garry and didn’t get as many. Garry then said he wanted to take us out to dinner at 13 Coins. We got seated at the counter so we could watch the chefs at work. I ordered liver and onions (nummy favorite of mine) and it was excellent. Garry and Darrel got the chicken parmesan, and Marilee ordered a seafood pasta dish. Everyone enjoyed their food and the 2 bottles of champagne made for a lot of laughs!

Sunday morning, Darrel went fishing and crabbing. Got a few crab and no fish. He went out again early Monday morning to fish with a club friend, Rick Brown, but didn’t even get a hit.

Darrel and the boat are running well! Haven’t had an issue with the boat since we left Canada. Maybe we were jinxed up there!

Darrel’s sister, Barbara, came in yesterday from Ketchikan and stayed for dinner. We had a good time catching up with her, then Courtney drove her to her mom’s.

Today, we are back at Group Health for chemo. We met with Dr. Feldman, and he said that Darrel’s labs looked good and his liver function was doing great. With the amount of cancer in the liver, I think he is expecting the liver to be acting up. The fact that it isn’t is good news.

The doctor put in an order for a CT scan after the next chemo to see if it is working. So, that will be scheduled around 9/2. We asked what would be next if it isn’t and he said he would have to make some calls and see if there were any experimental drugs being used. This is where Group Health’s association with both Virginia Mason and the Cancer Care Alliance comes in. Always other doctors available to give their opinions and recommendations.

One of the pharmacists that check the chemo went home sick so it was a long wait for the first chemo to show up. It has been going for about a half an hour now and takes 2. We can only hope the chemo and pump show up before it is done. Hopefully, traffic won’t be horrible on the way home – it was on the way up this morning.

Home Early, August 1, 2014

After leaving Ladysmith on Wednesday, July 30th, Darrel and I went to pull shrimp pots and fish and planned to catch up with the Bryant’s later at Wallace Island. We did a little better with the shrimp than we had the whole trip. We ended up with about 100, and we also caught 4 crab. Darrel was able to catch a few rock cod and one under-sized ling cod. I, again, caught nothing!

Wallace Island is a long narrow island with little on it. The anchorage was also long and narrow and the boats were far in the back anchored and stern tied to shore. I cooked steak, potatoes, and had leftover cabbage salad. The Bryant’s cooked their own chicken, mac & cheese, and salad. It was so quiet in the area that they didn’t want to fire up their generators and disturb the peace – mostly sailboaters in the anchorage.

The next morning I cooked up our crab and Carl’s and then we all took off. They were headed for Ganges and we decided to head to Sydney as it was Thursday and there is a huge street fair/market on Thursday nights.

We pulled our crab pots and stored them – not too many shrimp. Then trolled for salmon. After a while, we pulled the lines in and stopped to bottom fish. Darrel caught one small rock cod and I didn’t even bother dropping a line since I hadn’t been successful anyway.

We decided to move to another spot so started the engine and took off. Almost immediately, the engine started popping and acting strange – again! It seemed to me very similar to the problems we had around the 4th of July with the fuel pump. Darrel tried changing fuel filters while I putted us along on the kicker motor. At one point, a ferry was heading right for us and blasted us with his horn, even though I was going as fast as the kicker would take us. I fired up the big engine and even though it was backfiring and starved for gas, managed to get us a few yards further/quicker and avoided being rammed.

I told Darrel I was setting a course to Roche Harbor and even using the kicker motor we could be on dock by 5 or 6. So, off we went. At one point, we were only going about 1 mile an hour due to the current, but we averaged around 4 mph.

We pulled up to the Customs dock around 5:30 and I saw a man get off a boat to come help us dock. It was Roger Hazzard, a friend from the club. I got to talking with him and Darrel got the passports and went into the Customs office and came back out with an agent who told Roger, in no uncertain terms, to get back on his boat until we were done.

We got our slip and docked the boat and I got a text from Karen, Roger’s wife, inviting us for dinner since we had had such a long day. Yes! We had a very pleasant evening visiting with them and eating a very good barbecue chicken dinner.

The boat started up again with no problem so we decided to fuel up and head for home. If we ran into any problems, we would find the nearest port and Darrel would go get the truck and trailer and we would haul it home. But, it ran fine all the 110 miles home! It is crazy making to have it do this!

Marilee came and picked us up and took us home since we hadn’t left a vehicle at the club. We went back and unloaded it and brought the stuff home. Darrel just went back to throw the crab pots in and maybe troll for some salmon.

Three weeks to the day, we made it safely, but much poorer, home. It was the best of times, it was the worst of times…

Fun with the Bryants, July 29, 2014

It was a very hot day today. Not sure what the temperature reached but it was supposed to be about 96 degrees and it sure felt like it!

Darrel, Carl, Waylon, and I went out to check the shrimp pots and ended up with about 45. Better than we have done! We then dropped the crab pots. Carl and Darrel checked them twice more and got one legal crab.

Darrel has been doing fairly well but his feet are starting to get worse and he left his new prescription of pain meds at home! Chemo brain strikes! We are trying to see about getting them either overnighted to Garrison Bay or brought back with the Landes.

I had said I would do a fish fry for dinner for all of us not knowing it was going to be the hottest day of the year! I cooked up the ling cod we caught and froze a week or so ago. Had to do it in the boat on the stove top in a skillet since none of us had brought our fish fryers. I also made an asian cabbage salad and Carl cooked fries in the oven. Ann contributed the sangria.

The boys ended up drinking a lot of that sangria and had a very good time. Not such a great time the next morning, though.

Today we are going to head to Thetis Island and stay one more night with the Bryants. Then Darrel and I will head Southward tomorrow. We might catch up with them again in the San Juans. Hope to see the Landes again there too.

I meant to take pictures of the fish fry last night but was too busy cooking, so just one of the Ladysmith Maritime Society Marina. They have a program here for the recovery of Purple Martins, the largest swallow, that migrates from South America for the summer. Lots of birdhouses on each piling and lots of chirping going on all day. They even have a web cam in one of them showing a baby, that looks full grown.

Further developments…July 26 – 28, 2014

The boat part came in right on time on Saturday morning. The hydraulic steering unit shipped from Vancouver overnight. Darrel struggled with it for a couple of hours, because, of course, it wasn’t exactly the same. He finally got it on, but it didn’t give us full range with steering. The part was not exactly the same and had to be adapted. Why, they do that, I have no clue! At least we could steer, however.

So, at about 3:00 Saturday afternoon we headed for the fuel dock and then to either fish and go back to Campbell River or head south. It all depended on the winds and waves. My back still had not recovered from the Strait of Georgia crossing a week and a half ago.

We got out of the harbour and it was calm and clear, so off we went South. We got about 10 miles North of Comox and saw a lot of fishing boats, so we stopped and put out the lines. Trolled around for an hour or two and caught a small silver.

We decided, since it was after 5:00, we would stay at Comox that night. It is a large marina with mostly commercial fishing boats, sailboats, and really, really large pleasure boats. Here we were docked between 2 boats that were probably 65 feet or so in length. Felt a little out of place.

We headed up to the ‘pub’ for dinner thinking a bar with burgers. Nope. First question was if we had reservations and I looked around and immediately felt under dressed in my wrinkled tank top and shorts.

We ended up at the bar and ordered sandwiches. I had a Montrealer and Darrel had an Italian panini. The Montrealer was ‘smoked’ beef, with cheese, onions and a Caesar salad. The beef didn’t really tasted smoked, more like dried. It was good, but maybe someone who has been to Montreal can explain it to me.

We took showers at the marina before bed. It was the largest marina shower I have ever seen! A bit more expensive, however, as it was 1 loonie for 2 1/2 minutes. Usually, it more like a loonie for 4 or 5 minutes! But it felt good to get clean.

We left Comox around 6:15 and headed towards Nanaimo where we fueled up again. Darrel also went to the fishing supply store and bought some new downrigger line since he had lost 2 balls with the old stuff.

We stopped once more by Tree Island to fish for ling cod. The island had a house on it and they had brought in multiple tons of boulders to create their own little harbour with a dock for a boat. Can’t even begin to think how much that all must have cost.

We ended up at Montague Harbour (notice I am spelling it the Canadian way) with all the yacht club friends plus more. The Lande’s, Josowitz’s, both Bryant boys and their families, the Wamsley’s and us. Quite a raft of boats – largest one in the harbour.

Darrel, Carl, and Ken Bryant all worked on our boat most of the day trying to get the steering to work right. The managed to get it to improve, but it still isn’t quite right. It worked much better, though. Many more dollars to be spent, I imagine, when we get home! Yikes, this has been an expensive trip!

Today, we headed to Ladysmith with the Bryant families while the rest of the group headed back to the USA. We took 6 year old, Waylon, with us because he wanted to fish and shrimp. We stopped for a couple of hours but didn’t catch andy fish and only got 6 shrimp. He probably won’t want to go do that again!

It has been hot and sunny all day today and I think more is on the way tomorrow. I am fixing Asian marinated pork tenderloin tonight with roasted potatoes, cauliflower and broccoli.

It has been a good couple of days!

P.S. Just thought that we, or at least I, have been on this 24 foot boat for like 17 days. We haven’t quite killed each other yet, even though the boat problems have made it close.

Campbell River, July 25, 2014

Darrel had his chemo yesterday and arrived back to Campbell River this afternoon around 12:30. He seems to be feeling okay but said the cold sensitivity is back.

Yesterday, I managed to do several loads of laundry, go to the Real Canadian Superstore for groceries, picked up some steering fluid since we had been having issues with the steering when we came in on Tuesday. Still didn’t find a place for a pedicure, however.

Fixed chicken thighs that had been marinating since Monday when we had my pre-birthday appetizer party. Marinated with hoisin, soy, ginger, garlic, and sriracha. They turned out pretty good!

After Darrel got back today, we decided we would leave in the early morning on Saturday to try to beat the winds. I had lent our chart book and Burgee book to Richard and Suszanne yesterday, so we walked over to get them back. They are quite knowledgeable about the area between here and Nanaimo, so gave us some tips on place we could tuck into if the weather turned bad.

We went back to the boat and decided to get fuel. The slips and docks are very close here so Darrel walked the boat out of the slip and headed it out then jumped on. He immediately realized that the steering was still not working right even though we had added steering fluid.

He was able to get us out of the ‘row’ without hitting any boats. He opened the engine compartment and saw that the steering unit rod was broken. He tried various quick fixes, as we floated dangerously close to boats, docks, and the breakwater, with me going forward and reverse as needed. Nothing worked so he started the kicker motor and we inched back into our slip, again without hitting anything!

Richard and Suszanne had seen us floating by so they came over to find out the problem. Darrel took the steering unit out and he and Richard walked up to the marine store. Suszanne had just had a friend arrive so they went to get her settled after inviting me over for happy hour.

Darrel got back and the part will be in tomorrow at 10:00 – another $650! But, it was the last part in stock in Vancouver so at least we were lucky to get one.

I guess we will probably be here until Sunday morning now, unless the winds look really good tomorrow afternoon and from what I heard that wasn’t happening.

Happy Birthday to Me! July 23, 2014

imageWoke up to a cloudy morning and a Happy Birthday wish from Darrel. I also received birthday phone calls from Jan and Yvonne, and many Facebook wishes too! Thanks to everyone for all the good wishes.

Kind of a lazy day for me. Darrel washed the boat with fresh water! We are finally in a marina where water is free and you are allowed to wash boats with it. It is so nice not to have salt-crusted windows.

Packed up a small bag for Darrel to take home with him, then we went out for a birthday lunch. We walked up to the Riptide Pub just up from the marina. It was a pretty nice place, dark and pubby. I had an oyster and bacon sandwich – yes, we did just shuck a bunch of oysters last night, but it sounded good. Darrel had beef stroganoff. Both were really tasty.

It started raining quite heavy as we ate. Darrel had planned on walking to the floatplane dock but hadn’t brought a hat or coat. So, we asked the bartender to call a taxi. Took the taxi 30 minutes, but luckily we had allowed enough time for him to walk. So, off he went and here I sit all by myself in the rain on the boat.

I was going to do laundry but don’t feel like hauling it back and forth in the rain. I guess I will just hang out and read. I think the weather is supposed to improve somewhat tomorrow so there is plenty of time.

Shortly after writing the above (I was waiting to post until I could get a picture of the marina) I had a visitor!  It was Suzanne that we met at Homfray Lodge on Monday.  She came to invite me to dinner for my birthday.  How sweet is that?  They are going to ‘pick’ me up at 6:00 so I will add more when I get back before posting this.

What a wonderfully nice couple.  Suzanne & Richard took me over to the White Spot, a Canadian chain restaurant.  It was a very nice place with a varied menu.  Jim Ramsay, to get the food part out of the way – I had a Southwestern Chicken Salad, Suzanne and Richard had specialty burgers (the White Spot is known for their burgers.)  Richard, however, was thinking ahead and got the special one with a little blueberry pie!  All was delicious!

Suzanne & Richard are from Victoria, BC.  She is a kindergarten teacher and he is retired – Navy, I think.  They were so thoughtful to invite me out and she even bought me a book that she told me about the other day.  Her husband died of cancer young when their kids were only 2 and 4.  The book she got me as Love, Medicine & Miracles.  She said it helped her a lot so it was really nice that she was able to find one here in a used book store!

They also insisted on buying my dinner.  It is unbelievable how many really nice people you meet boating, and the Canadians seem to be extra-special.  That is a shout out to my Canadian peeps too!

So, I have had a wonderful birthday even though I thought it would be lonely.  I have made two new friends and can’t wait to see them tomorrow.

Oh, yeah, Darrel made it home even though his place was an hour and fifteen minutes late and Courtney was texting me like crazy.  He couldn’t find the place, then didn’t find dad, then waited for the guy to get off his personal phone call!
